A two-bottle introduction to Sanctum, a family-run winery working on the steep, marl-rich slopes of Lipoglav in northeastern Slovenia.

The Podkubovšek family draws on a local winemaking history that dates back to the 12th century, when Carthusian monks planted Pinot Noir and Chardonnay in the region. Today, Sanctum continues that tradition through hand-harvesting, native yeast fermentation, patient aging, and minimal intervention in the cellar.
